Tiramisu

I had wanted to make tiramisu using the recipe given by Alison but the mascarpone cheese that I finally found at Carrefour was not cheap.

And than still have to buy ladyfingers (biscuit) and XO or any other type of wine.

So, I decided to drop the idea of making it. Anyway, I’m never a great fan of tiramisu.


Tiramisu Recipe
Ingredients:
250g mascarpone cheese
2 eggs
3 tablespoon sugar
250 ml strong coffee
4 table spoons of XO
1½ pack of "ladyfingers"
Pinch of salt
Few drops of lemon juice

Directions:
- Beat mascarpone until soft.
- In separate bowl beat egg yolk, 1 tablespoon sugar until mixture is pale yellow & fluffy.
- Gradually beat in the softened mascarpone.

- Use electric beater or wire whisk, beat egg whites, salt & lemon juice until stiff peak formed.
- Fold in egg whites into mascarpone mixture.

- Mix coffee with XO, 2 tablespoons sugar.
- Line one medium deep square tray (23 x 23 cm) deep (8cm) with ladyfingers.
- Sprinkle coffee mix over lady fingers. They should be wet but not over saturated.
- Cover with half of the cheese & egg mixture.
- Make another layer of ladyfingers, moist with coffee & cover with remaining egg mixture.
- Sprinkle with cocoa powder.
- Chill in fridge for about 1 hr or more before serving.
